That's odd. Once you set the date it should remember it. Also whenever you sign in to Xbox Live it gets the correct date from the server, so updates automatically.
Speaking from a PC background, a computer has small battery which powers certain components while the PC is turned off - including parts that store the time and date so it knows what the correct time to display when you turn it back on. If this battery fails then your PC would lose track of the date. Not sure how the 360 stores this but it could be a similar issue. If you get no luck from this thread try contacting MS support and see what they say.Question about my 360

It must be connected to Live to get the real date. At least that's the thing with my console.
